Dr. Val’s Healthy Brain Granola 5 cups Quinoa flakes 3 cups toasted Buckwheat/Kasha 1 cup unsweetened, shredded coconut (optional) 1/4 cup chia seeds or black sesame seeds 2/3 cup pumpkin seeds 2/3 cup sunflower seeds 1/4 cup coconut flour 1 cup water 1/2 cup brown rice syrup or xylitol (or less depending on desired sweetness) 1 tsp vanilla bean powder 1/2 inch fresh ginger - peeled 1/4 cup coconut oil/coconut butter 1/2 tsp cinnamon 1/2 tsp cardamom 1. Mix grains, coconut, seeds and coconut flour in a large bowl. 2. Blend water, brown rice syrup / xylitol, spices, coconut oil or coconut butter in blender until smooth. Pour over dry ingredients and mix well 3. Divide onto 2 large cookie sheets. Bake for 1 1/2 hours at 250F stirring every 30 mins until dry. 4. Remove from oven, let cool and put into air tight container.
